Ingredients

– 4 large flour tortillas

– 1.5 cups shredded sharp cheddar cheese

– 1 cup chopped precooked boneless chicken (such as rotisserie chicken)

– 6 pieces of crispy bacon, cooked and crumbled

– 2 scallions, finely diced

– 4 tablespoons ranch dressing

– 2 tablespoons oil or butter (such as olive oil or vegetable oil)

Instructions

1-First, place one flour tortilla on a cutting board and spread 0.75 cups of shredded sharp cheddar cheese evenly on top. Then, add half of the chopped chicken, bacon, scallions, and drizzle about 2 tablespoons of ranch dressing over the fillings. Next, add another 0.75 cups of shredded sharp cheddar cheese on top, then cover with a second flour tortilla to hold everything in place.

2-After assembling, heat the oil in a large frying pan over medium heat, making sure to swirl it around to coat the pan evenly. Carefully place the quesadilla in the pan and cook for 2 to 5 minutes until the bottom turns crispy and golden and the cheese starts to melt. Once thatโ€™s done, flip the quesadilla carefully and cook the other side for 2 to 3 more minutes until itโ€™s crispy and the cheese is fully melted.

3-Finally, remove it from the heat, sprinkle lightly with salt while itโ€™s hot, then cut into pieces. Repeat the process with the remaining ingredients and serve with additional ranch dressing, salsa, and pickled jalapeรฑos if you want to amp up the flavor. This method takes about 5 minutes for prep and 15 minutes for cooking, totaling around 20 minutes, so itโ€™s ideal for busy parents or students.
