πŸ„ Delight in the rich, savory flavors of mushroom and herbs on a flaky puff pastry base that’s perfect for any occasion.
🌿 This easy-to-make tart offers an elegant appetizer or light meal with a beautiful balance of earthy mushrooms and creamy Gouda cheese.

  • Total Time: 1 hour
  • Yield: 4-6 servings

Ingredients

– 1 sheet puff pastry forms the light, flaky base for the tarte fine

– 200g fresh champignons provides the earthy mushroom flavor and texture

– 150g Gouda cheese, grated adds creamy, nutty richness to the filling

– 100ml heavy cream binds ingredients and enriches the custard

– 1 small onion, finely chopped enhances sweetness and depth

– 1 garlic clove, minced boosts aromatic flavor

– 1 tbsp olive oil for sautΓ©ing mushrooms and onions

– Salt, to taste balances and elevates overall taste

– Freshly ground black pepper, to taste adds a gentle spice

– Unsalted butter for cooking the shallots and mushrooms

– 200g mixed mushrooms (e.g., shiitake, baby bella, white mushrooms), sliced for variety

– Garlic cloves, minced additional if needed beyond the 1 specified

– Fresh thyme leaves for herbaceous notes

– Chopped fresh rosemary for added depth

– Balsamic vinegar for a tangy finish

Instructions

1-First, prepare the puff pastry dough: If using homemade, complete through the second refrigeration; if store-bought, thaw fully and keep refrigerated.

2-Melt unsalted butter in a skillet over medium heat; cook sliced shallots until soft.

3-Add mixed mushrooms, garlic, salt, pepper, thyme, and rosemary. Cook until the mushrooms are tender.

4-Remove the skillet from heat; stir in balsamic vinegar and let the mixture cool slightly.

5-Preheat your oven to 400Β°F (204Β°C). Line baking sheets with parchment paper. Meanwhile, roll out the puff pastry into a large rectangle, about 10Γ—17 inches; for store-bought sheets, place one on top of the other before rolling.

6-Cut the dough into desired sizes for individual tarts or keep it whole for a full tart. Brush the edges with egg wash and crimp with a fork.

7-Sprinkle grated Gouda cheese over the dough, leaving a border, then evenly distribute the cooled mushroom topping over the cheese and press gently.

8-Bake individual tarts for 20-22 minutes or a whole tart for 35-38 minutes until golden and crisp.

9-Remove from the oven, garnish with fresh herbs if desired, and let cool slightly before serving warm or at room temperature.

Notes

🍳 Homemade rough puff pastry adds flakiness but requires chilling; store-bought is convenient.
🌰 Adding balsamic vinegar after cooking mushrooms enhances flavor without overpowering.
πŸ§€ Gouda cheese can be swapped with gorgonzola, gruyΓ¨re, feta, goat cheese, or mozzarella for variety.
