Instructions
-First, prepare the puff pastry dough: If using homemade, complete through the second refrigeration; if store-bought, thaw fully and keep refrigerated.
-Melt unsalted butter in a skillet over medium heat; cook sliced shallots until soft.
-Add mixed mushrooms, garlic, salt, pepper, thyme, and rosemary. Cook until the mushrooms are tender.
-Remove the skillet from heat; stir in balsamic vinegar and let the mixture cool slightly.
-Preheat your oven to 400Β°F (204Β°C). Line baking sheets with parchment paper. Meanwhile, roll out the puff pastry into a large rectangle, about 10Γ17 inches; for store-bought sheets, place one on top of the other before rolling.
-Cut the dough into desired sizes for individual tarts or keep it whole for a full tart. Brush the edges with egg wash and crimp with a fork.
-Sprinkle grated Gouda cheese over the dough, leaving a border, then evenly distribute the cooled mushroom topping over the cheese and press gently.
-Bake individual tarts for 20-22 minutes or a whole tart for 35-38 minutes until golden and crisp.
-Remove from the oven, garnish with fresh herbs if desired, and let cool slightly before serving warm or at room temperature.
