– 2 tablespoons honey
– ΒΌ cup heavy cream
– Scant Β½ teaspoon salt
– 1ΒΌ cups sweetened shredded coconut (roughly chopped optional)
– Β½ teaspoon pure vanilla extract
– ΒΎ cup milk chocolate chips
– Flaky finishing salt (optional)
Instructions
1-Preheat oven: Preheat oven to 350Β°F. Line an 8Γ8 inch pan with parchment or foil and lightly grease it to prevent sticking.
2-For the crust: Beat softened butter, brown sugar, salt, and flour until crumbly, then press the mixture into the pan bottom and bake for 15 minutes until itβs golden.
3-While the crust bakes, prepare the filling: Melt butter pieces in a saucepan over medium heat with brown sugar, honey, cream, and salt. Bring it to a simmer with bubbles throughout and cook for 2 minutes, then remove from heat and stir in vanilla and shredded coconut.
4-Pour the coconut filling evenly over the hot crust and pop it back in the oven for another 12 minutes.
5-Let the pan cool completely on a wire rack before moving on.
6-For the topping: Melt the milk chocolate chips using a double boiler or microwave, then drizzle it in a zigzag pattern over the cooled bars. If you like, sprinkle on some flaky salt and let everything set for several hours before cutting.
