๐Ÿช Indulge in the best of both worlds with a rich brownie center wrapped in a classic chocolate chip cookie.
๐Ÿซ This dessert offers a decadent treat that combines soft, chewy cookie texture with fudgy brownie goodness inside.

  • Total Time: 2 hours 20 minutes
  • Yield: 18 cookies 1x

Ingredients

Scale

1 batch of homemade brownies (or preferred store-bought brownies)

2 1/2 cups all-purpose flour

1 1/2 cups cake flour

2 teaspoons cornstarch

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 cup unsalted cold butter, cut into cubes

1 cup packed brown sugar (light or dark)

1/2 cup granulated sugar

2 large eggs

2 large egg yolks

2 teaspoons vanilla extract

1 1/4 cups semi-sweet chocolate chips

1 cup white chocolate chips

Instructions

1-Prepare the brownie batch and cool at room temperature for 15 minutes, then freeze for 30 to 45 minutes to make them easy to handle.

2-Make the cookie dough: Combine the dry ingredients all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt in a bowl and mix well.

3-Cream the cubed butter with the brown sugar and granulated sugar until smooth, then beat in the eggs, egg yolks, and vanilla extract for that perfect flavor base.

4-Gradually add the dry ingredients to the wet mixture in portions until just combined, then fold in the semi-sweet chocolate chips and white chocolate chips to add those gooey pockets of goodness.

5-Preheat your oven to 400ยฐF to get it nice and hot for baking.

6-Portion the cookie dough into approximately 1.5 ounce balls and flatten slightly into circles for easy stuffing.

7-Trim edges from the cooled brownies and cut into 1-inch cubes (about 1 ounce each) to prepare the surprise centers.

8-Roll each brownie cube into a ball, place one onto a flattened cookie dough circle, cover with another flattened dough portion, pinch the edges to seal, and roll into a smooth ball for that stuffed effect.

9-Bake 6 to 8 cookies at a time on parchment paper or silicone baking mat-lined sheets for 10 minutes, or until golden brown these will come out perfectly chewy!

10-Cool cookies on the baking sheet for 15 minutes, then transfer to a cooling rack to cool completely and set their texture.
