๐Ÿฅฆ Baked Broccoli Cheese Balls offer a deliciously crispy golden crust with a flavorful, cheesy interior that’s perfect for snacks or appetizers.
๐Ÿง€ This recipe provides a healthier baked alternative to frying, making it easy to enjoy a tasty treat with less guilt.

  • Total Time: 40 minutes
  • Yield: 15 to 18 balls

Ingredients

– 2 cups packed roughly chopped soft cooked broccoli (about 400g/13 oz raw broccoli)

– 1 cup panko breadcrumbs

– 2 eggs

– 3/4 cup shredded cheese (Cheddar, Colby, or Tasty cheese)

– 2 shallots or scallions, finely sliced

– 2 cloves garlic, minced

– 1/4 teaspoon salt

– Black pepper to taste

– Olive oil spray for baking

– 2/3 cup plain yoghurt

– Zest of 1/2 lemon

– 1 tablespoon lemon juice

– 1/2 garlic clove, minced

– 2 teaspoons extra virgin olive oil

– Salt and pepper to taste

Instructions

1-Preheat oven: Preheat oven to 200C/390F and line a baking tray with parchment paper to keep things mess-free.

2-Combine ingredients: In a bowl, combine all the ingredients for the broccoli cheese balls except the olive oil spray. Mix everything well while mashing the broccoli until it’s a uniform mixture this helps the balls hold their shape.

3-Form balls: Scoop heaped tablespoons of the mixture, press firmly to form balls, and place them on the prepared tray. Make sure they’re compact so they don’t fall apart in the oven.

4-Spray and bake: Spray the balls with olive oil for that extra crisp, then bake for 25 minutes or until they’re golden and crunchy on the outside.

5-Cool and serve: Once done, let them cool a bit and serve with the garlic lemon yoghurt sauce or even ketchup for a fun twist.

Notes

๐Ÿฅฆ Use fresh or frozen broccoli; ensure fresh broccoli is cooked soft enough for easy mashing.
โ„๏ธ The mixture can be refrigerated pre-shaped or balls can be frozen after cooking for later use.
๐Ÿฝ๏ธ The yoghurt sauce tastes best after resting; store leftovers in the fridge for later servings.
