Ingredients
Two 5.2-ounce packages of soft garlic and herb cheese
Two pints of cherry or grape tomatoes
3 to 4 tablespoons of extra virgin olive oil
Four cloves of minced garlic
Salt and pepper to taste
Half a teaspoon of red pepper flakes
10 to 16 ounces of pasta (type of your choice)
Half a cup of reserved pasta water
A quarter cup of fresh basil (about six leaves)
One cup of chopped fresh baby spinach (optional)
Half a cup of freshly grated Parmesan cheese
Instructions
1- Drizzle with 3 to 4 tablespoons of extra virgin olive oil and season with salt, pepper, four cloves of minced garlic, and half a teaspoon of red pepper flakes.
2- Bake uncovered for 30 to 35 minutes until the tomatoes soften and the cheese melts perfectly.
3- Meanwhile, boil salted water and cook 10 to 16 ounces of your chosen pasta according to package instructions. Remember to reserve half a cup of pasta water before draining.
4- Once baking is done, mix the roasted tomatoes and cheese with the cooked pasta right in the baking dish.
5- Add the reserved pasta water, a quarter cup of fresh basil, one cup of chopped fresh baby spinach if you like, and top with half a cup of freshly grated Parmesan cheese.
6- Adjust seasoning with salt and pepper as needed, then serve for about six people. This takes just 5 minutes to prep and 35 minutes to cook.
