๐Ÿฅง Savor the fresh flavors of homemade blueberry pie made with simple, wholesome ingredients.
๐Ÿ‡ This pie delivers a perfect balance of sweet and tangy alongside a flaky, buttery crust that’s sure to impress.

  • Total Time: 1 hour 30 minutes
  • Yield: 8 servings 1x

Ingredients

Scale

Enough for one bottom and one top crust pie crust dough (recommended mixture of shortening and butter for best texture)

6 cups fresh blueberries

2/3 cup granulated sugar (adjustable up to 3/4 cup if blueberries are less sweet)

1/4 cup all-purpose flour

2 tablespoons cornstarch

1/4 teaspoon ground cinnamon

2 tablespoons lemon juice

1 teaspoon lemon zest

1 tablespoon cold unsalted butter, cut into small cubes

1 large egg and 1 tablespoon milk for egg wash

Optional coarse sugar for sprinkling on the crust

Instructions

1-Preheat your oven to 375ยฐF (190ยฐC) and gather all your ingredients on a clean work surface for efficiency.

2-In a large bowl, mix the fresh blueberries with granulated sugar, all-purpose flour, cornstarch, ground cinnamon, lemon juice, and lemon zest. Stir gently to coat the berries evenly, which helps lock in the flavors.

3-Roll out half of the pie crust dough and fit it into a 9-inch pie plate. Trim the edges carefully for a neat finish.

4-Pour the blueberry filling into the crust, spreading it out smoothly to ensure even baking.

5-Roll out the second half of the dough and place it over thetop, either as a full cover or in a lattice pattern for a decorative touch.

6-Seal the edges by pinching or crimping them together, and cut a few small slits in the top if you’re using a solid crust to let steam escape.

7-Brush the top with the egg wash for a golden shine, and sprinkle on coarse sugar if you want extra crunch.

8-Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden and the filling bubbles. Let it cool for at least 2 hours to set properly before slicing.
