Ingredients

– 2 tablespoons avocado oil

– ½ medium white onion, diced

– 1 jalapeño pepper, diced

– 3 garlic cloves, chopped

– 1 teaspoon salt

– 1½ tablespoons taco seasoning

– Pinch of cayenne pepper (optional)

– 3 cups black beans, drained and rinsed, with ½ cup bean liquid reserved

– 1 tablespoon fresh lime juice, plus wedges for serving

– 6 to 8 tortillas, warmed

– pickled cabbage (red or green) for topping

– cilantro lime crema for topping

– Cotija cheese for topping

– sliced jalapeño peppers for topping

Instructions

1-First, heat the avocado oil in a medium pot or large skillet over medium heat. Add the diced onion, jalapeño, garlic, and salt, then cook for about 8 minutes, stirring occasionally, until softened. This step builds a flavorful base that makes the tacos stand out.

2-Next, stir in the taco seasoning and cayenne pepper if you’re using it; cook for 1 minute to let the spices bloom. Then, add the black beans and ¼ cup of the reserved bean liquid, cooking for 5 to 8 minutes until the mixture thickens and the vegetables are soft. If needed, add the remaining ¼ cup of bean liquid to keep it moist.

3-After that, mash some of the beans lightly with the back of a spoon for a creamy texture. Stir in the fresh lime juice and adjust the seasoning to taste for that perfect zing. Finally, assemble the tacos by layering the bean mixture, pickled cabbage, cilantro lime crema, Cotija cheese, sliced jalapeños, and fresh cilantro in the warmed tortillas.
