2 pounds cooked BBQ pulled pork

4 medium russet potatoes (scrubbed clean)

1 tablespoon canola oil

2 tablespoons butter (melted)

2 cups grated cheddar cheese

sour cream

sliced green onion

cooked crumbled bacon

ranch dressing

Instructions

1-Preheat oven to 400Β°F (200Β°C). Rub potatoes with canola oil and bake on a sheet for about 45 minutes until tender. Let them cool slightly once done.

2-Cut potatoes in half lengthwise. Scoop out the flesh, leaving a ΒΌ-inch border. Brush the skins inside and out with melted butter and sprinkle with salt.

3-Place skins cut-side down on a baking sheet and bake for 7 minutes to crisp them up.

4-Fill the skins with warm pulled pork, top with cheddar cheese, and return to the oven briefly until the cheese melts.

5-Serve immediately with optional garnishes like sour cream, sliced green onion, cooked crumbled bacon, or ranch dressing.
