Instructions
1-First: preheat the oven to 350°F and prepare your loaf pan by greasing and flouring it aim for a pan that’s about 9.25 x 5.25 x 2.75 inches. If you’re adding walnuts, lightly roast them on a pan while stirring to avoid burning, then chop and let them cool.
2-Next, in a mixing bowl, cream the softened butter and sugar until it’s smooth and fluffy. Mash the bananas to a chunky applesauce texture and mix them into the butter and sugar blend, then add the eggs and stir well to combine.
3-In another bowl, whisk together the flour, baking soda, and salt. Add this dry mixture to your wet ingredients and mix just until combined, avoiding over-stirring for a tender result. Fold in the vanilla extract, along with the walnuts and raisins if you’re using them.
4-Pour the batter into your prepared pan and smooth the top. Bake it for 55-60 minutes, checking with a toothpick to ensure it’s done when it comes out clean. Let it rest in the pan for 5-10 minutes before moving it to a wire rack to cool completely. This step helps it hold its shape.
