Ingredients

2 cups all-purpose flour plus 1 tablespoon for coating blueberries

3/4 teaspoon baking soda

1/2 teaspoon kosher salt

1 cup granulated sugar

1/4 cup softened butter

1 cup mashed ripe bananas

2 eggs

1/3 cup vanilla or plain yogurt

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries (extra for topping; frozen can be used but may streak batter)

Cooking spray for greasing

Instructions

1-Preheat oven to 350ยฐF (175ยฐC).

2-In a medium bowl, mix together 2 cups flour, baking soda, and salt.

3-In a large bowl, beat sugar and softened butter until fluffy and well combined (about 1 minute).

4-Add mashed bananas, eggs, yogurt, and vanilla extract to the sugar mixture and beat until blended.

5-Gradually add the flour mixture and beat at low speed until just moist.

6-Toss blueberries with 1 tablespoon of flour to prevent sinking, then gently fold into the batter.

7-Spoon batter into a greased 8 1/2 x 4 1/2-inch loaf pan, pressing extra blueberries on top for decoration.

8-Bake for 60 70 minutes or until a wooden pick inserted in the center comes out clean.

9-Cool bread in the pan for 10 minutes before transferring to a wire rack to cool completely.
