2 lbs boneless, skinless chicken breasts, thinly cut or pounded
6 oz softened cream cheese
1/4 cup mayonnaise
1/2 cup crispy bacon, crumbled (about 8 slices)
1/2 cup chopped green onions (about 4 onions)
1.5 cups shredded Colby Jack cheese
Additional green onions and bacon for garnish (optional)
Instructions
1-Preheat oven to 350หF.
2-In a medium bowl, mix 6 oz softened cream cheese, 1/4 cup mayonnaise, 1/2 cup crispy bacon crumbles, 1/2 cup chopped green onions, and half of the 1.5 cups shredded Colby Jack cheese until combined.
3-Place 2 lbs boneless, skinless chicken breasts in a baking dish and spread the cheese mixture evenly over the chicken.
4-Top with the remaining shredded Colby Jack cheese (approximately 0.75 cups).
5-Bake uncovered for 30-40 minutes or until the chicken reaches an internal temperature of 165หF and is cooked through.
6-Garnish with extra green onions and bacon if desired, then serve hot.
