2 cups cooked chicken, chopped or shredded

1 cup salsa of choice

1 teaspoon cumin

1/2 teaspoon dried oregano leaves, crushed

1 cup shredded cheese

2 green onions, chopped (about 1/4 cup)

6 (8-inch) flour tortillas

2 tablespoons melted butter

Optional toppings: diced tomato, sour cream, guacamole, salsa, shredded cheddar cheese

Instructions

1-Preheat oven to 400ยฐF.

2-Mix the 2 cups cooked chicken, 1 cup salsa, 1 teaspoon cumin, 1/2 teaspoon dried oregano leaves (crushed), 1 cup shredded cheese, and 2 green onions (chopped, about 1/4 cup).

3-Place about 1/3 cup of the chicken mixture in the center of each of the 6 (8-inch) flour tortillas.

4-Fold the opposite sides over the filling, roll from the bottom, and place seam-side down on a baking sheet.

5-Brush each chimichanga with the 2 tablespoons melted butter.

6-Bake at 400ยฐF for 25 minutes or until golden brown and crispy.

7-Garnish with desired toppings and serve with salsa on the side.
