Ingredients

Scale

1 Β½ cups (188 g) flour

1 teaspoon baking powder

Β½ teaspoon baking soda

Β½ teaspoon salt

1 teaspoon ground cinnamon

ΒΌ teaspoon ground nutmeg

ΒΌ teaspoon ground cloves or allspice (optional)

Β½ cup (113 g) unsalted butter, room temperature

Β½ cup (100 g) granulated sugar

ΒΌ cup (50 g) packed light brown sugar

2 large eggs, room temperature

1 Β½ teaspoons pure vanilla extract

β…“ cup (80 ml) milk

1 large apple, peeled and grated or finely diced (about 1 cup or 125 g)

1 cup (226 g or 2 sticks) unsalted butter, room temperature

2 Β½ cups (300 g) confectioners’ sugar, sifted

2 teaspoons pure vanilla extract

1 teaspoon ground cinnamon

12 tablespoons milk

Instructions

1-Getting ready to bake: Start by preheating your oven to 350Β°F and lining a muffin tin with paper liners. This simple step sets the stage for success and makes cleanup easy.

2-Mix dry ingredients: Next, in a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until they’re well combined. This dry mix is the base that gives your cupcakes their rise and flavor. In another bowl, beat the butter, brown sugar, and granulated sugar until smooth and creamy, which takes about 2 minutes.

3-Combine wet ingredients: Then, add the eggs and vanilla extract, mixing until everything blends nicely. Now, add half of the flour mixture to the wet ingredients, stir in the milk, and follow with the rest of the flour mixture. Gently fold in the diced apples to keep the batter light over-mixing can make your cupcakes tough.

4-Bake and frost: Fill the muffin cups three-quarters full and bake for 18 to 20 minutes, or until a toothpick inserted comes out clean. Let them cool on a wire rack before moving on. For the frosting, whip the butter until fluffy, gradually add the powdered sugar, then mix in the vanilla and cinnamon. Adjust with milk for the right consistency and frost your cooled cupcakes.
