Ingredients

– 2 1/2 cups (315 g) all-purpose flour

– 1 tablespoon granulated sugar

– 1 teaspoon salt

– 1 cup (226 g) unsalted cold butter, cut into cubes

– 1/4 to 1/3 cup (60-80 ml) cold water

– 6 to 8 medium-sized apples (approximately 1.5 kg), such as Pink Lady, Fuji, or Royal Gala

– 2 tablespoons unsalted butter

– 1/2 cup (100 g) brown sugar

– 1 1/2 teaspoons ground cinnamon

– 1 1/2 tablespoons cornstarch

– 1/4 teaspoon salt

– 1/4 cup (60 ml) water

– 1/4 cup (30 g) almond flour, finely ground nuts, or breadcrumbs (to prevent sogginess)

– 1 egg beaten with 1 tablespoon water for brushing the crust

– Extra brown sugar for dusting

– Vanilla ice cream (about 1 pint, or use other flavors as desired)

Instructions

1-First, mix the flour, sugar, and salt in a bowl, then cut in the cold butter until you get a mix of tiny and medium-sized pieces.

2-Add cold water gradually to bring the dough together, knead it lightly, and refrigerate it for a bit to make it easier to handle.

3-Peel, core, and slice the apples, then cook them with butter, brown sugar, cinnamon, cornstarch, salt, and water in a pan until the mixture thickens to a honey-like consistency. Let it cool afterward.

4-Roll out most of the dough for the pie base and place it in a metal pie pan for even baking. Sprinkle almond flour on the base to keep it crisp.

5-Add the cooled apple filling on top, then roll out the reserved dough, cut it into strips, and weave them into a lattice pattern over the filling.

6-Trim the edges, fold them under, crimp them, brush with the egg and water mixture, and dust with brown sugar for a nice finish.

7-Bake at 350Β°F (180Β°C) for 50-60 minutes, covering the edges with foil at first to prevent over-browning. Let the pie cool before serving with a scoop of ice cream.
