2 tablespoons (25 g) granulated sugar

1 teaspoon salt

1 cup (225 g) cold unsalted butter, cut into cubes

6 to 8 tablespoons (90 to 120 ml) ice water

6 to 7 medium apples (Pink Lady, Royal Gala, or Fuji), peeled, cored, and sliced

3 tablespoons (45 g) unsalted butter

3/4 cup (150 g) brown sugar

2 teaspoons ground cinnamon

2 tablespoons cornstarch

1/4 teaspoon salt

1/4 cup (60 ml) water

3 tablespoons almond flour or finely ground nuts or breadcrumbs

1 large egg

1 tablespoon water

1 tablespoon brown sugar

Vanilla ice cream or preferred flavor

Instructions

1-First, mix the flour, sugar, and salt for the crust, then cut in the cold butter until pieces vary in size. Add ice water gradually and knead lightly until dough forms, then chill it for at least 30 minutes. This step keeps the crust flaky and prevents it from getting tough.

2-Next, for the filling, cook the sliced apples with butter, brown sugar, cinnamon, cornstarch, salt, and water in a saucepan until it thickens like honey. Let it cool completely to avoid a soggy crust. This preparation ensures the flavors meld together just right.

3-Roll out two-thirds of the dough and fit it into a pie plate, then sprinkle with almond flour to keep things crisp. Add the cooled filling and top with the remaining dough woven into a lattice. Trim and crimp the edges for a neat finish.

4-Whisk the egg with water for an egg wash, brush it on the crust, and sprinkle with brown sugar. Cover the edges with foil to stop them from browning too fast. Bake at 350Β°F for 30 minutes, remove the foil, and bake another 30 minutes until golden and bubbly.
