Instructions

1-Peel and dice the apples into small pieces to get that perfect texture.

2-Melt the butter in a skillet over medium heat until it turns light brown and smells nutty, which takes about 3-5 minutes.

3-Add the diced apples right away and stir them into the brown butter for even cooking.

4-Mix in the brown sugar, cinnamon, nutmeg, allspice, and salt, then cook for 10-12 minutes until the apples soften and the flavors blend.

5-Whisk the cornstarch with the maple syrup and add it to the apple mixture; simmer for 1-2 minutes until it thickens, then stir in the vanilla.

6-Spread the filling on a small sheet pan to cool, and pop it in the fridge or freezer briefly while you handle the pastry.

7-Preheat your oven to 400°F and grease eight spots in a muffin pan.

8-Unroll the puff pastry and cut it into 8 equal squares.
